  • 2 large eggs
  • 1 cup panko breadcrumbs

  • 1/2 cup olive oil
  • 1/2 cup tomato sauce
  • 1/4 cup fresh mozzarella, cut into cubes
  • 1/2 cup grated provolone cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons olive oil

Instructions

  1. Preheat your oven to 450°F (230°C). Set up a breading station with flour, beaten eggs, and a breadcrumb mixture.
  2. Pound each chicken breast to an even 1/2-inch thickness and season with salt and pepper.
  3. Whisk eggs in one bowl and mix panko breadcrumbs with 1/2 cup Parmesan in another.
  4. Coat chicken in flour, then dip in eggs, and press into breadcrumb mixture. Let rest for 10-15 minutes.
  5. Heat oil in a skillet and fry chicken until golden, about 2 minutes per side. Transfer to paper towels.
