- 1 1/2 lbs sweet potato (680 g) peeled, diced into ~1/4" cubes

- 1 lb 93/7 lean ground beef
- 1 tbsp tomato paste (16 g)
- 1 tbsp taco seasoning
- 2 cups 2% low fat cottage cheese (452 g)
- 4 small avocados (400 g)
- 2 tbsp hot honey (42 g)
Instructions
- Fire up your oven to 425°F and line a half sheet pan with parchment paper for easy cleanup.
- Toss those diced sweet potatoes onto your prepared pan, give them a light spritz of cooking spray, and season generously with salt, pepper, and just a pinch of cinnamon. Pop them in the oven for 30 minutes, flipping halfway through and hitting them with another round of seasoning.
- While those beauties are roasting, let's tackle the beef. Heat up a skillet over medium-high heat, add your ground beef, and start breaking it apart with a spoon or meat chopper. Cook for about 5 minutes until it's perfectly browned all over, then drain off any excess grease.
- Stir in your tomato paste, taco seasoning, and a splash of water — watch everything come together into this gorgeous, fragrant mixture. Let it cook for another 1-2 minutes, stirring constantly, then pull it off the heat.
- Now comes the fun part — building your masterpiece! Layer your golden sweet potatoes and seasoned beef in a bowl, add dollops of creamy cottage cheese and fresh avocado slices, then finish with that magical drizzle of hot honey.
