These Hot Honey Ground Beef Bowls are loaded with protein, healthy fats, and fiber—making them an absolute powerhouse meal that's as satisfying as it is nutritious.


Ingredients

  • 1 1/2 lbs sweet potato (680 g) peeled, diced into ~1/4" cubes
  • salt, pepper, cinnamon to taste
  • 1 lb 93/7 lean ground beef
  • 1 tbsp tomato paste (16 g)
  • 1 tbsp taco seasoning
  • 2 cups 2% low fat cottage cheese (452 g)
  • 4 small avocados (400 g)
  • 2 tbsp hot honey (42 g)

Instructions

  1. Fire up your oven to 425°F and line a half sheet pan with parchment paper for easy cleanup.
  2. Toss those diced sweet potatoes onto your prepared pan, give them a light spritz of cooking spray, and season generously with salt, pepper, and just a pinch of cinnamon. Pop them in the oven for 30 minutes, flipping halfway through and hitting them with another round of seasoning.
  3. While those beauties are roasting, let's tackle the beef. Heat up a skillet over medium-high heat, add your ground beef, and start breaking it apart with a spoon or meat chopper. Cook for about 5 minutes until it's perfectly browned all over, then drain off any excess grease.
  4. Stir in your tomato paste, taco seasoning, and a splash of water — watch everything come together into this gorgeous, fragrant mixture. Let it cook for another 1-2 minutes, stirring constantly, then pull it off the heat.
