Ingredients
  

For the Roasted Eggplant

  • 2 medium Eggplants sliced and salted
  • 2 tablespoons Olive Oil for roasting
  • Salt & Pepper to taste

For the Mushroom Filling

  • 1 tablespoon Olive Oil for sautéing
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 8 ounces Mushrooms sliced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil

For the Cheese Mixture

  • 1 cup Ricotta Cheese
  • 1 large Egg
  • ½ cup Parmesan Cheese grated (optional)
  • 2 tablespoons Fresh Parsley chopped

For Assembly

  • 3 cups Marinara Sauce
  • 1 cup Mozzarella Cheese shredded

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C) and prepare baking sheets.
  • Slice the eggplants and sprinkle with salt; let sit for 15 minutes.
  • Blot eggplant and arrange on baking sheet with olive oil; roast for 20-25 minutes.
  • Heat olive oil in a skillet; sauté onion until translucent.
  • Add garlic and sauté for another minute.
  • Add mushrooms; cook until tender, seasoning with oregano and basil.
  • Mix ricotta, egg, parmesan, and parsley until smooth.
  • Layer marinara sauce, eggplant, cheese mixture, and mushrooms in a baking dish.
  • Repeat layering; finish with marinara and mozzarella.
  • Cover with foil and bake for 30 minutes; remove foil and bake for additional 10-15 minutes.
  • Allow to rest for 10 minutes before serving.

Notes

This lasagna makes for fantastic leftovers; enjoy with fresh herbs on top.
