For the Sauce

  • 1 cup chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons dry sherry
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch

For the Chicken

  • 1 pound chicken breast cut into pieces
  • 2 tablespoons oil divided

For the Vegetables

  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 1 medium carrot sliced
  • 2 cups broccoli florets
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced

For the Garnish

  • 2 tablespoons sesame seeds
  • 2 stalks green onions chopped

Step-by-Step Instructions

  • In a small bowl, whisk together the chicken broth, soy sauce, sesame oil, dry sherry, honey, rice vinegar, and cornstarch until smooth. Set it aside.
  • Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the chicken pieces and stir-fry for 4-5 minutes until golden brown. Remove and keep warm.
  • In the same skillet, add another tablespoon of oil and stir-fry the bell pepper, onion, carrot, and broccoli for 3-4 minutes until tender-crisp.
  • Return the chicken to the pan and add the garlic and ginger, cooking for 30 seconds until fragrant.
  • Pour the prepared sauce over the stir-fry, stirring as it thickens for another 1-2 minutes until glossy.
  • Remove from heat and garnish with sesame seeds and chopped green onions before serving hot.
