  • Prepare the Marinade: In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, and honey or maple syrup. Stir in dried thyme, rosemary, smoked paprika, along with salt and pepper until smooth.
  • Marinate the Mushrooms: Place cleaned whole mushrooms in a resealable plastic bag or shallow dish. Pour the marinade over and refrigerate for at least 30 minutes, or 2-3 hours for best results.
  • Soak the Skewers: If using wooden skewers, soak in water for at least 30 minutes.
  • Preheat the Grill: Preheat grill to medium-high heat (about 400°F). Lightly oil the grates.
  • Assemble the Skewers: Thread marinated mushrooms onto soaked skewers, leaving space. Add chunks of bell peppers or zucchini for color.
  • Grill the Skewers: Place skewers on the grill and cook for 10-12 minutes, turning occasionally for even cooking.
