  • Preheat your oven to 350°F (175°C). Line a 10-inch springform pan with a parchment collar that rises two inches above the rim.
  • In a small bowl, whisk together the sour cream, lime juice, and salt until smooth. Refrigerate the mixture.
  • Heat a medium skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks until browned (5-7 minutes). Stir in taco seasoning and cook for an additional minute.
  • Layer the tortilla chips neatly in the bottom of the prepared springform pan to create a solid base.
  • Spoon the cooked ground beef mixture evenly over the tortilla chips, followed by scattering the chopped bell peppers and red onions on top.
  • Sprinkle a generous layer of shredded cheddar cheese, followed by a layer of shredded Monterey Jack cheese.
  • Continue layering with more chips, beef, veggies, and both cheeses until all ingredients are used. Crush a few extra chips on top.
