Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Lightly grease a baking dish with 1 tablespoon of olive oil.
  • Place the cod fillets in the greased baking dish. Drizzle with remaining olive oil and sprinkle with salt, black pepper, and optional red pepper flakes.
  • In a mixing bowl, combine coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger. Whisk until fully blended.
  • Pour the sauce over the seasoned cod fillets in the baking dish.
  • Bake for 20-25 minutes or until the cod is opaque and flakes easily with a fork.
  • Once baked, let it sit for a few minutes, then garnish with fresh parsley and arrange lemon slices on top.
  • Allow to cool for a few minutes before serving alongside steamed rice or a light salad.

Notes
