Ingredients
  

For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoon olive oil for sautéing
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoon sugar
  • 1 tablespoon sesame oil
  • 2 tablespoon sriracha sauce

For the Rice

  • 1 cup sushi rice rinsed
  • 1.5 cups water
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon salt

For Layering and Garnish

  • 1 pc avocado, sliced
  • 1 pc cucumber, julienned
  • sesame seeds optional
  • fresh cilantro or green onions optional

For the Spicy Mayonnaise

  • 0.5 cup mayonnaise
  • 1 tablespoon sriracha sauce

Step-by-Step Instructions

  • Rinse 1 cup of sushi rice under cold water until clear. Combine rinsed rice and 1½ cups water in a pot, bring to boil, then simmer for 15 minutes. Stir in 1 tablespoon rice vinegar and ½ teaspoon salt, let sit covered for 10 minutes.
  • Heat 2 tablespoon olive oil in a skillet over medium-high heat, add 1 lb shrimp, cook 2-3 minutes each side until opaque. In a bowl, whisk 2 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, 2 teaspoon sugar, and 2 tablespoon sriracha. Drizzle this over shrimp and cook for another minute.
  • In a bowl, combine ½ cup mayonnaise with 1 tablespoon sriracha, mix well. Adjust heat as desired.
  • Layer ingredients in a round mold: start with sushi rice, press it down. Add shrimp, slices of avocado, and cucumber. Press each layer slightly.
  • Carefully remove the mold, sprinkle with sesame seeds and fresh herbs, drizzle with spicy mayonnaise before serving.
