Step‑by‑Step Instructions

  • Cut the chicken into small, even cubes and pat dry. Season with salt and pepper.
  • Heat olive oil in a large skillet. Cook the seasoned chicken for 5–7 minutes until golden brown.
  • In the same skillet, add chopped onion and cook for 2–3 minutes. Stir in minced garlic and cook for another minute.
  • Add uncooked rice to the pan, stir well and toast for about 1 minute.
  • Pour in chicken broth and BBQ sauce, scrape any browned bits, return chicken and mix well.
  • Reduce heat to low, cover and simmer for 18–20 minutes until rice is tender.
  • Uncover and fluff the rice with a fork, let rest for 5 minutes before serving.

Notes
