Step‑by‑Step Instructions

  • Generously coat the chicken pieces with Cajun seasoning. Heat a skillet over medium-high heat and add a drizzle of oil. Once hot, sear the chicken for about 4–5 minutes on each side until golden brown. Remove from skillet and set aside.
  • In the same skillet, lower the heat to medium and add the chopped onion, bell peppers, and minced garlic. Sauté for 5–7 minutes until softened and fragrant. Sprinkle in more seasoning if desired.
  • Add the uncooked rice to the skillet, stirring to coat it with the flavorful mixture. Toast the rice for about 1 minute while constantly stirring.
  • Pour in the chicken broth and increase heat slightly. Nestle the seared chicken back into the pan. Cover and let simmer for about 20–25 minutes.
  • Once cooking time is up, turn off the heat and let it rest with the lid on for about 5 minutes. Fluff the rice with a fork and garnish with parsley or green onions and a squeeze of lemon.
