For the Squash Mixture

  • 2 medium Butternut squashes Diced.
  • 2 tablespoons Olive oil Divided.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Fresh thyme Or dried thyme.

For the Topping

  • 2 medium Onions Thinly sliced.
  • 4 ounces Goat cheese Crumbled.
  • ½ cup Heavy cream
  • 1 large Egg For egg wash.
  • ¼ teaspoon Red pepper flakes Optional.

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Toss diced butternut squashes with 1 tablespoon olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes.
  • Heat remaining olive oil in a skillet, add onions and a pinch of salt. Cook for about 20 minutes until golden brown.
  • Roll out puff pastry to fit the tart pan, press into corners and prick the bottom with a fork.
  • Spread caramelized onions over the pastry, layer roasted butternut squash, crumble goat cheese, and drizzle with cream and thyme.
  • Bake for 25-30 minutes until golden brown.
  • Cool for 10 minutes before slicing.
