  • 8 ounces wide egg noodles Try whole wheat noodles for a healthier option.

For Flavoring

  • 4 cups low-sodium chicken broth Homemade broth can elevate the dish!
  • 2 teaspoons olive oil Use butter for a richer flavor.
  • 1 teaspoon dried thyme Fresh thyme can be used if available.
  • ¼ cup fresh parsley Avoid if you’re not a fan, or substitute with cilantro.
  • salt Adjust to taste.
  • pepper Adjust to taste.

Step-by-Step Instructions

  • Prepare your ingredients by chopping carrots, celery, onion, and mincing garlic.
  • In a large pot over medium heat, add olive oil and sauté onion and garlic for about 2 minutes until fragrant.
  • Add sliced carrots and diced celery, stirring occasionally for another 3-5 minutes.
  • Add chicken breasts and chicken broth, increase heat to boil, then reduce to simmer for about 20 minutes.
  • Remove chicken, shred it, and return to the pot along with juices.
  • Stir in egg noodles and cook according to package instructions, about 8 minutes until al dente.
  • Finally, stir in thyme and parsley, and season with salt and pepper to taste.

Notes

For best results, add noodles just before serving to prevent them from becoming mushy. Store leftovers without noodles to maintain texture.
