Step-by-Step Instructions

  • In a large soup pot, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of Italian sausage, breaking it up as it cooks. Sauté for about 5–7 minutes until browned and no longer pink.
  • Add 1 medium diced onion to the pot and sauté for 3–4 minutes until translucent. Stir in 2 minced cloves of garlic and cook for 30 seconds.
  • Toss in 4 cups of peeled and diced potatoes, stirring them into the mixture. Pour in 4 cups of chicken broth and season with ½ teaspoon each of salt, black pepper, and dried thyme. Bring to a boil, then reduce to a simmer.
  • Allow the soup to simmer uncovered for about 15–20 minutes until potatoes are fork-tender.
  • Once the potatoes are tender, stir in 1 cup of heavy cream or half-and-half along with ½ cup of shredded cheddar cheese, if using. Simmer for an additional 5 minutes.
  • Ladle the soup into bowls and garnish with fresh parsley or green onions. Serve immediately.

Notes

This Sausage Potato Soup can be stored in the fridge for up to 4 days or frozen for up to 2 months before adding cream.
