Step-by-Step Instructions for Beef Cabbage Barley Soup

  • Heat the oil in a medium-large pot over medium-high heat for about 2 minutes until shimmering.
  • Add the ground beef to the pot, breaking it up and cooking for 5-7 minutes until browned.
  • Stir in the chopped onion and minced garlic, and cook for 3-4 minutes until onions are soft.
  • Mix in the chopped cabbage, sliced carrots, dry barley, and bay leaves, stirring and cooking for 2 minutes.
  • Pour in the tomato sauce, soy sauce, miso paste, and water, stirring until well combined.
  • Once boiling, reduce heat to low, cover, and let simmer for 1 hour.
  • After simmering, taste and adjust seasonings if needed, then serve warm with fresh parsley.
