Step-by-Step Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil shimmers, add 1 pound of diced boneless, skinless chicken thighs. Cook for about 5-7 minutes until browned and fully cooked through.
  • Stir in 4 cloves of minced garlic, 1 tablespoon of grated fresh ginger, and 1 diced onion into the pot. Sauté for an additional 3 minutes.
  • Add 2 sliced carrots and 2 stalks of sliced celery to the pot. Cook for another 5 minutes, stirring frequently.
  • Pour 6 cups of chicken broth into the pot, stirring gently to combine. Bring to a rolling boil over medium-high heat.
  • Once boiling, add 2 cups of egg noodles to the pot. Reduce heat to medium-low and let simmer for about 10 minutes.
  • Stir in 1 cup of fresh spinach and 2 tablespoons of soy sauce. Cook for 1-2 minutes until spinach wilts.
  • Taste your soup and season with salt and pepper. Garnish with chopped green onions and fresh cilantro if desired.
  • Ladle the soup into bowls and serve hot, adding lime slices on the side.

Notes

Use fresh ginger and garlic for the best flavor. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2-3 months.
