Step-by-Step Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat until it shimmers. Add the chopped onion and cook for about 5 minutes, stirring until translucent. Then, stir in 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried basil, and optional crushed red pepper flakes, cooking for another minute until fragrant.
  • Pour in 2 cans of whole peeled tomatoes, including their juices, and use a wooden spoon to break them up into smaller pieces. Next, stir in 2 cups of vegetable broth along with 1 tablespoon of sugar.
  • Bring the soup to a simmer over medium-low heat and let it cook for 20 to 25 minutes.
  • Once the soup has simmered and thickened, remove the pot from the heat. Using an immersion blender, puree the soup until it reaches a smooth consistency.
  • Stir in ½ cup of heavy cream and season with salt and pepper to taste.
  • Ladle the hot soup into bowls, and garnish with fresh basil leaves.
