Ingredients
  

For the Potatoes

  • 1 kg Baby potatoes halved

For the Cod

  • 4 pieces Cod fillets seasoned with salt and pepper

For the Cream Sauce

  • 2 tablespoon Olive oil for sautéing the cod
  • 2 tablespoon Butter adds richness
  • 2 cloves Garlic minced
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 2 teaspoon Chopped rosemary
  • 2 tablespoon Lemon juice for brightness

For Garnishing

  • to taste Fresh parsley for garnish

Preparation Steps

  • In a large pot, bring salted water to a rolling boil over high heat. Carefully add the halved baby potatoes, cooking for about 15 minutes until fork-tender. Drain and set aside.
  • Season four cod fillets with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook the seasoned cod for 3-4 minutes on each side until it flakes easily. Remove and keep warm.
  • In the same skillet, reduce heat and melt butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the heavy cream and chicken broth into the skillet, stirring to combine. Bring to a gentle simmer and add chopped rosemary and lemon juice. Allow to thicken for 4-5 minutes.
  • Fold the cooked baby potatoes into the cream sauce, ensuring they're coated. Nestle the cod back into the skillet and heat through for 2 minutes.
  • Transfer cod and potatoes to a serving plate. Drizzle with remaining sauce and garnish with parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to maintain texture.
