  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, paprika, and Italian seasoning. Cook chicken for about 5-6 minutes on each side, until golden brown and cooked through. Transfer chicken to a plate and let it rest.
  • In the same skillet, add another tablespoon of olive oil and sauté minced garlic for 30-60 seconds until fragrant. Whisk in whole wheat flour to create a roux, cooking for an additional 30 seconds. Gradually add chicken broth and low-fat milk, stirring until sauce thickens, about 2-3 minutes.
  • Reduce heat to low and mix in Greek yogurt and grated Parmesan cheese until sauce is smooth and creamy. Return cooked chicken and drained pasta to the skillet, tossing everything together. If using, add fresh spinach just before serving.
