  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for about 1 minute until fragrant.
  • Stir in 1 cup of chopped sun-dried tomatoes and cook for an additional 2-3 minutes.
  • Gently fold in 4 cups of butter beans and cook for about 2 minutes until heated through.
  • Gradually stir in 2 cups of baby spinach and cook until wilted.
  • Pour in ½ cup of heavy cream and add ½ cup of grated Parmesan cheese. Season with 1 teaspoon of dried oregano, salt, and pepper.
  • Let the mixture simmer over low heat for 5-7 minutes until the sauce thickens.
  • Remove from heat and garnish with freshly chopped basil before serving.
