Ingredients
  

Chili Base

  • 1 tablespoon olive oil for sautéing
  • 1 medium onion finely chopped
  • 1 tablespoon garlic minced
  • 2 medium green chiles sliced (poblano and jalapeño)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 pound boneless, skinless chicken breasts
  • 3.5 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 30 ounces white beans 2 (15-ounce) cans, drained and rinsed
  • 1.5 cups frozen corn
  • 0.5 cups heavy cream or sour cream

Toppings

  • 0.25 cup fresh cilantro chopped
  • 1 medium lime cut into wedges
  • 0.25 cup cheddar cheese shredded
  • 1 cup tortilla chips or tortilla strips

Instructions
 

Cooking Steps

  • Heat 1 tablespoon of olive oil in a large stockpot over medium-high heat.
  • Add 1 finely chopped medium onion, 1 tablespoon of minced garlic, and sliced green chiles. Sauté for about 2-3 minutes.
  • Sprinkle in 1 teaspoon of ground cumin and 1 teaspoon of dried oregano, stirring well to combine.
  • Add 1 pound of boneless, skinless chicken breasts and 3.5 cups of chicken broth. Season with salt and pepper.
  • Let the chicken cook for approximately 12-15 minutes before shredding.
  • Return the shredded chicken back to the pot with 2 cans of white beans. Simmer for an additional 5-7 minutes.
  • Mash about ⅓ of the beans for a creamier texture.
  • Stir in 1.5 cups of frozen corn and 0.5 cup of heavy cream and cook for another 2-3 minutes.
  • Serve hot, topped with cilantro, cheddar cheese, and tortilla chips.

Notes

Customize with additional toppings like avocado or hot sauce as desired. Can be made a day in advance for enhanced flavors.
