Step-by-Step Instructions for Crispy Smashed Carrots

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Fill a pot with water, add salt, and bring to a boil. Add thick carrot rounds and cook for 10 to 12 minutes until fork-tender.
  • Drain the carrots and allow to cool. Smash each carrot round to about half an inch thick.
  • Drizzle the smashed carrots with olive oil and sprinkle with garlic powder, smoked paprika, salt, and black pepper, then top with Parmesan cheese.
