Ingredients
  

For the Soup Base

  • 1 pound ground beef or ground turkey for a lighter option
  • 1 cup onion diced; sweet onions work beautifully too
  • 3 cloves garlic minced; can use garlic powder
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 can diced tomatoes opt for fire-roasted for a smoky flavor
  • 1 can tomato paste or use crushed tomatoes for a chunkier texture
  • 1 tablespoon dried basil or fresh basil for an alternative
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 teaspoon dried rosemary just a pinch goes a long way
  • 1 teaspoon crushed red pepper flakes optional for spice
  • salt to taste
  • pepper to taste

For the Lasagna

  • 8 ounces lasagna noodles gluten-free pasta works perfectly too
  • 1 cup ricotta cheese or cottage cheese as a substitute
  • ½ cup grated Parmesan cheese or nutritional yeast for a vegan version
  • 2 cups shredded mozzarella cheese or provolone for a twist

For Garnish

  • ¼ cup fresh basil or sprinkle of parsley if out

Instructions
 

Cooking Steps

  • In a skillet over medium heat, add ground beef and cook until browned, about 5–7 minutes. Drain excess fat.
  • Add diced onion and minced garlic to the skillet, sauté for about 3 minutes until the onion is translucent. Transfer to crockpot.
  • In the crockpot, add chicken broth, diced tomatoes, tomato paste, dried basil, oregano, rosemary, crushed red pepper flakes, salt, and pepper. Stir well.
  • Cover the crockpot and cook on low for 7–8 hours or on high for 3–4 hours.
  • About 30 minutes before serving, add broken lasagna noodles to the soup and cover again.
  • In a bowl, combine ricotta cheese and grated Parmesan cheese. Set aside.
  • Just before serving, stir in shredded mozzarella cheese until melted.
  • Ladle into bowls and top with the ricotta-Parmesan mixture and fresh basil before serving.

Notes

This soup is customizable; adjust toppings and vegetables as desired. Ensure to season incrementally for the best flavor balance.
