Step-by-Step Instructions

  • Wash the cucumbers under cool running water. Slice them thinly, about ⅛ inch thick, and place in a bowl.
  • In a medium mixing bowl, combine Greek yogurt, crumbled feta cheese, and chopped fresh herbs. Add salt and pepper, and mix until smooth.
  • Spread the yogurt-feta mixture over two slices of whole-grain bread evenly.
  • Layer the sliced cucumbers on top of the spread on one slice of bread.
  • Place the second slice of bread on top of the cucumbers, spread side down. Gently press down.
  • Cut the sandwiches in half diagonally and serve immediately.
