Preparation

  • Grease the springform pan with unsalted butter or line with parchment paper.

  • Press the crumb mixture into the bottom of the pan and chill in the refrigerator.

  • Incorporate eggs one at a time, mixing well after each addition.
  • Stir in sour cream and lemon juice until smooth.
  • Melt butter in a saucepan, cooking until golden brown and nutty.
  • Cool slightly and drizzle into batter while mixing gently.
  • Pour filling over cooled crust and tap pan to release air bubbles.
  • Bake for 55 to 60 minutes until edges are set and center slightly jiggles.
  • Turn off oven and let cheesecake cool inside for 1 hour.
  • Remove from oven, cool to room temperature, then refrigerate for at least 4 hours.
