Ingredients
  

For the Mushrooms

  • 1 cup Dried porcini mushrooms soaked in hot water
  • 8 oz Sliced cremini mushrooms

For the Base

  • 1 tablespoon Extra virgin olive oil for sautéing
  • 1 Yellow onion finely chopped
  • 1 Finely chopped carrot
  • 1 Red bell pepper
  • 4 cloves Garlic minced

For Flavoring

  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 2 tablespoons Tomato paste
  • 1 cup Full-bodied red wine

For Thickening

  • 2 tablespoons Vegan butter
  • 2 tablespoons Flour

For Serving

  • to taste Salt
  • to taste Pepper
  • to garnish Fresh chopped chives

Instructions
 

Cooking Instructions

  • Soak the dried porcini mushrooms in 1 cup of hot water for about 20 minutes.
  • Warm olive oil in a large pot over medium heat. Sauté the onion, carrot, and red bell pepper for 3 minutes.
  • Add the sliced cremini mushrooms, minced garlic, dried thyme, and oregano. Cook for 7 to 10 minutes.
  • Remove and chop the soaked porcini mushrooms. Add to the pot with tomato paste and cook for 3 more minutes.
  • Deglaze with red wine and reserved soaking liquid. Boil, then simmer for 10 minutes.
  • Mash together vegan butter and flour. Stir into the pot to thicken the sauce, adding salt to taste.
  • Serve warm over vegan mashed potatoes or pasta, garnished with chives and pepper.

Notes

For best flavors, use various mushroom types and a good quality red wine. Adjust seasonings as needed.
