Instructions

Step-by-Step Instructions

  • In a medium saucepan, combine 2 cups of diced apples, ½ cup of sugar, 1 tablespoon of lemon juice, 1 teaspoon of cinnamon, and ¼ teaspoon of nutmeg. Cook over medium heat for about 10-15 minutes, stirring occasionally, until the apples are soft and slightly translucent.
  • Once the apple mixture is done cooking, remove it from the heat and allow it to cool slightly for 5-10 minutes.
  • In a large mixing bowl, combine the cooled apple mixture with 2 cups of crushed graham crackers and 8 oz of softened cream cheese. Blend everything together until well combined and smooth.
  • Transfer the truffle mixture to the refrigerator and chill for about 30 minutes.
  • After chilling, take the mixture out of the refrigerator, scoop out portions, and roll them into small balls, about 1 inch in diameter.
  • In a microwave-safe bowl, melt 1 cup of chocolate chips in 30-second intervals, stirring between each interval until completely smooth.
  • Carefully dip each truffle into the melted chocolate, ensuring they are fully coated.
  • Once all the truffles are coated, refrigerate them for about 30 minutes or until the chocolate has fully set.

Notes

These truffles can be stored for up to 5 days in the refrigerator or up to 2 months in the freezer. Thaw frozen truffles overnight in the refrigerator before enjoying.
