Ingredients
  

For the Squash

  • 1 each Acorn squash halved
  • 1 tablespoon Olive oil for brushing
  • to taste Salt
  • to taste Pepper

For the Filling

  • 2 tablespoons Unsalted butter
  • 2 cups Apples diced
  • 1 cup Walnuts chopped
  • ½ cup Dried cranberries
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • ¼ cup Brown sugar
  • ½ teaspoon Salt
  • ¼ cup Maple syrup for drizzling

Cooking Steps

  • Preheat your oven to 375°F (190°C).
  • Brush the cut sides of the squash halves with olive oil and sprinkle with salt and pepper. Place cut side down on a baking sheet and roast for 25-30 minutes.
  • Melt butter in a pan, add diced apples, walnuts, and cranberries. Sauté for 5-7 minutes until apples are tender.
  • Stir in cinnamon, nutmeg, brown sugar, and salt, cooking for an additional 2-3 minutes until combined.
  • Turn squash cut side up, fill each half with the apple mixture.
  • Drizzle maple syrup over the filling in each squash half.
  • Bake for an additional 15-20 minutes until tender and tops are caramelized.
  • Allow to cool for a few minutes before serving.
