Ingredients
  

For the Bread Base

  • 2 cups All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • ¼ teaspoon Ground nutmeg
  • 1 cup Granulated sugar
  • 1 cup Vegetable oil Can substitute with melted coconut oil.
  • 2 large Large eggs
  • 1 teaspoon Vanilla extract
  • 1 ½ cups Grated zucchini Secret ingredient.

For the Streusel Topping

  • ½ cup All-purpose flour
  • ¼ cup Light brown sugar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 4 tablespoons Cold unsalted butter Cut in for crumbly texture.

Optional Add-ins

  • ½ cup Chopped walnuts or pecans For added crunch.

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or oil and dust with flour.
  • In a large bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg until combined.
  • In another bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fold in the grated zucchini and nuts if using, ensuring even distribution.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • In a small bowl, mix the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter until crumbly.
  • Sprinkle the streusel mixture over the batter in the loaf pan.
  • Bake for 50–60 minutes until a skewer inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to 3 months.
