Step-by-Step Instructions

  • Begin by boiling a large pot of salted water. Add soba or rice noodles and cook according to the package instructions until al dente.
  • While the noodles are cooking, add shredded carrots, red bell pepper, snap peas, and chopped green onions to a large mixing bowl and toss together.
  • In a small mixing bowl, combine soy sauce, teriyaki sauce, rice vinegar, sesame oil, honey (or maple syrup), and grated ginger. Whisk until smooth.
  • Pour the dressing over the mixed vegetables and toss gently to coat.
  • Add the drained and cooled noodles to the vegetable mixture and mix gently.
  • Sprinkle toasted sesame seeds and chopped cilantro over the salad, then toss lightly to combine.
  • Add your choice of protein if desired, mix again, and serve immediately or chill before serving.
