Ingredients
  

For the Salad

  • 4 cups mixed salad greens a combination of romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber sliced
  • 1 medium bell pepper diced
  • ¼ medium red onion thinly sliced
  • ¼ cup shredded carrots
  • ½ cup radishes sliced
  • ½ medium avocado sliced
  • ¼ cup feta cheese optional
  • to taste fresh herbs basil, parsley, or cilantro

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt
  • to taste pepper

Instructions
 

Preparation Steps

  • Rinse mixed salad greens under cold water and pat dry. Place in a large salad bowl.
  • Halve cherry tomatoes and slice cucumber. Dice bell pepper and add to salad bowl.
  • Thinly slice red onion, add shredded carrots and sliced radishes. Stir gently to combine.
  • Slice avocado into wedges and gently place atop salad.
  • Sprinkle feta cheese over the salad if desired.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt and pepper.
  • Drizzle dressing over the salad, toss gently to combine.
  • Garnish with freshly chopped herbs.
  • Serve immediately for best freshness.
