Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Brush each of the 8 corn tortillas with 1 tablespoon of cooking oil and lay them in a single layer on a baking sheet.
  • Bake the tortillas in the preheated oven for about 10 minutes, or until they turn crisp and lightly golden.
  • In a large mixing bowl, combine 1 ½ cups of shredded rotisserie chicken, 2 tablespoons of salsa, and 1 tablespoon of taco seasoning mix.
  • Spread a layer of 15 ounces of canned black beans over each crispy tortilla.
  • Scoop the chicken mixture on top of the black beans on each tortilla.
  • Sprinkle 2 cups of canned corn and 8 ounces of shredded colby jack cheese evenly over the chicken filling.
  • Return the tostadas to the oven and bake for an additional 5 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle fresh cilantro leaves and diced tomatoes on top.
