  • Rinse sushi rice under cold water until water runs clear. Combine with water and cook in a rice cooker or saucepan.
  • Transfer cooked rice to a bowl. Mix rice vinegar, sugar, and salt, pour over rice, and fold gently.
  • Preheat oven to 375°F (190°C). Spray muffin tin, press wonton wrappers into cups, and bake for 8-10 minutes.
  • In a bowl, mix diced fish, diced avocado, and julienned cucumber. Stir in cream cheese and season.
  • Spoon sushi rice into cooled wonton cups, then top with fish mixture.
