Ingredients
  

For the Stir Fry

  • 2 tablespoons Olive oil Perfect for sautéing
  • 1 tablespoon Garlic Minced
  • 2 cups Shiitake mushrooms Thinly sliced; brown mushrooms as substitute
  • 1 cup Extra firm tofu Cut into 1-inch wide strips
  • 4 halves Baby bok choy Halved

For the Sauce

  • 1 tablespoon Soy sauce Savory richness
  • 0.5 tablespoon Balsamic or black rice vinegar Adds acidity
  • 0.5 teaspoon Ground black pepper Season to taste
  • 1 teaspoon Sesame oil Lends a nutty finish

For Garnish

  • to taste Sesame seeds Adds crunch and flavor

Instructions
 

Cooking Instructions

  • Heat 2 tablespoons of olive oil in a large pan or wok over medium heat for 1-2 minutes.
  • Add 1 tablespoon of minced garlic to the hot oil, sauté for approximately 30 seconds.
  • Add 2 cups of thinly sliced shiitake or brown mushrooms, stir for 3-4 minutes.
  • Incorporate 1 cup of extra firm tofu, cook for 4-5 minutes until lightly browned.
  • Add 4 halved baby bok choy, stir continuously for 2-3 minutes until wilted.
  • Pour in 1 tablespoon of soy sauce, 0.5 tablespoon of vinegar, 0.5 teaspoon of pepper, and 1 teaspoon of sesame oil, stir for a minute.
  • Cook for an additional minute, then remove from heat.
  • Serve over steamed rice, sprinkle with sesame seeds.

Notes

Experiment with vegetables and adjust seasoning according to taste. Store leftovers in an airtight container for up to 3 days.
