  • 16 large white or cremini mushrooms Choose firm, fresh mushrooms for the best texture.

For the Filling

  • 8 oz cream cheese softened
  • ½ cup cooked sausage or crumbled bacon
  • ¼ cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1 tablespoon fresh parsley chopped
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper

For the Eyeball Effect

  • 16 small olives pitted, for 'pupils'

For Baking

  • Cooking spray or olive oil for greasing

Step‑by‑Step Instructions for Stuffed Mushroom Eyeballs

  • Preheat your oven to 375°F (190°C).
  • Gently clean the mushrooms with a damp cloth and remove the stems, finely chopping them.
  • In a mixing bowl, combine chopped mushroom stems, cream cheese, sausage or bacon, parmesan, garlic, parsley, salt, and pepper. Mix until creamy.
  • Stuff each mushroom cap with the filling, pressing down slightly.
  • Place the stuffed mushrooms on a greased baking sheet.
  • Press a small olive into the center of each stuffed mushroom cap.
  • Bake for about 20-25 minutes until tender and bubbly.
  • Let cool for a few minutes before serving. Arrange on a platter.
