  • Start by cutting 1 lb of boneless, skinless chicken breasts into 1-inch cubes for even cooking. Prepare 1 cup of white rice and 2 cups of green beans according to package instructions.
  • In a large skillet, heat ½ tablespoon of avocado oil over medium-high heat for about 1 minute until shimmering. Add the cubed chicken and sauté for 10-12 minutes until golden brown and fully cooked through.
  • While the chicken cooks, whisk together the sauce ingredients: ¼ cup coconut aminos, 1 tablespoon honey, 1 tablespoon toasted sesame oil, ½ teaspoon ground ginger, 1 tablespoon minced garlic, 2 tablespoons rice vinegar, ¼ teaspoon black pepper, 1 teaspoon lime zest, and 1 tablespoon lime juice until smooth.
