Step-by-Step Instructions

  • In a large pot, heat the olive oil over medium heat for about 1 minute.
  • Add the finely chopped onion and minced garlic, sautéing for 2-3 minutes until the onion turns translucent.
  • Stir in the diced carrots and celery, cooking for another 5 minutes.
  • Add the diced zucchini to the pot and cook for an additional 3 minutes.
  • Pour in 6 cups of low-sodium vegetable broth and the can of diced tomatoes. Add dried basil and oregano, plus salt and pepper to taste.
  • Increase the heat to bring the soup to a gentle boil.
  • Once boiling, reduce heat to low and cover, allowing to simmer for 15-20 minutes.
  • Add the tortellini to the pot and cook according to package instructions, usually about 7-10 minutes.
  • Stir in the roughly chopped fresh spinach and cook for an additional 2 minutes.
  • Taste the soup and adjust seasoning as needed before serving.
  • Ladle the soup into bowls and optionally garnish with parsley and Parmesan cheese.
