For Decoration

  • ½ cup Chocolate chips Use mini chips for cute, spooky eyes.
  • 1 each Edible black marker Optional for drawing features on your ghosts.

Step-by-Step Instructions

  • Begin by preheating your oven to 225°F (110°C). Line two baking sheets with parchment paper, making small ghost shapes for piping.
  • In a clean, glass bowl, add room temperature egg whites and a pinch of cream of tartar. Beat on medium speed until soft peaks form, about 2-3 minutes.
  • With the mixer running, slowly add granulated sugar, one tablespoon at a time, beating until stiff, glossy peaks form, about 5-7 minutes.
  • Gently fold in the vanilla extract. Transfer the meringue into a piping bag fitted with a large round tip.
  • Pipe small ghost shapes on the prepared baking sheets, lifting upwards to create peaks.
  • Place the baking sheets in the oven for 1.5 to 2 hours. The meringues are done when they feel dry to the touch.
  • Turn off the oven and leave the meringues inside for an additional hour to cool completely.
  • Use mini chocolate chips to create eyes on your cooled meringues and use an edible black marker for additional features.

Notes

Store in an airtight container at room temperature for up to 3 days; freezing for up to 1 month is also an option.
