Preparation Steps

  • Preheat your oven as specified on the white cake mix box. In a mixing bowl, combine the cake mix with its ingredients, whisk until smooth, and pour into a greased 9×13-inch baking pan. Bake for about 30 minutes.
  • Once baked, cool the cake in the pan on a wire rack for 30 minutes.
  • Poke holes in the cooled cake using a wooden spoon, spacing them about 1 inch apart.
  • Prepare the gelatin by mixing it with 2 cups of hot water until fully dissolved and pour it over the cake.
  • Microwave the raspberry preserves for 30 seconds to make them spreadable, then evenly spread over the cake.
  • Spread the thawed whipped topping over the preserves, covering the entire surface.
  • Sprinkle the shredded coconut evenly over the whipped topping.
  • Cover the cake with plastic wrap and chill in the refrigerator for at least 4 hours.
