  • 2 pieces bay leaves

Step-by-Step Instructions

  • Heat olive oil over medium heat in a large stockpot. Add the chopped onion and minced garlic, cooking until soft and golden brown for about 5-7 minutes.
  • Add the diced sweet potatoes, canned diced tomatoes, vegetable broth, dried thyme, and bay leaves into the pot. Bring to a boil, which should take about 5-6 minutes.
  • Reduce heat to low and simmer uncovered for 45-50 minutes, stirring occasionally, until sweet potatoes are tender.
  • Remove and discard bay leaves from the pot to avoid overpowering herbal flavor.
  • Blend a few cups of the soup until smooth, then return to the pot for a creamy texture.
  • Stir in chopped kale or spinach and parsley. Cook for an additional 5-7 minutes until greens are wilted.
  • Adjust seasoning with salt and pepper to taste before serving.
  • Ladle into bowls and serve, optionally topped with Parmesan or Romano cheese.

Notes
