Step-by-Step Instructions for Gyeran Mari

  • In a medium-sized bowl, whisk together 5 medium eggs, ¼ teaspoon salt, and ⅛ teaspoon black or white pepper for about 1-2 minutes until frothy.
  • Fold in 2 tablespoon chopped or grated carrot and 1 chopped green onion until evenly mixed.
  • Heat a non-stick pan over low heat with 1 teaspoon neutral oil for about 1 minute, swirling to coat.
  • Pour ⅓ of the egg mixture, cook for 2-3 minutes until edges set and the center is slightly wet.
  • Gently roll the omelette towards the opposite side of the pan using a spatula.
  • Pour another ⅓ of the mixture into the pan and cook until set, then gently lift the rolled omelette and let the uncooked mixture flow underneath.
  • Repeat with the final ⅓ of the egg mixture, rolling to complete the Gyeran Mari.
  • Let the roll rest on a cool surface for about 2-3 minutes, then slice into 6-8 pieces.
