Step‑by‑Step Instructions for Spicy Chicken Soup

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of boneless, skinless chicken breasts and sear for about 5-7 minutes. Remove and set aside to cool before shredding.
  • In the same pot, add chopped onion, minced garlic, diced bell pepper, sliced carrots, and diced celery. Sauté for about 5-7 minutes until soft.
  • Stir in 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of paprika, ½ teaspoon of red pepper flakes, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook the spice mixture for 1-2 minutes.
  • Add diced tomatoes, 4 cups of chicken broth, and 1 tablespoon of tomato paste. Stir thoroughly and bring to a gentle boil.
  • Shred the cooked chicken into bite-sized pieces. Return it to the pot and reduce heat to medium-low to simmer.
  • Cover the pot and let the soup simmer for about 20 minutes, stirring occasionally.
  • Stir in 1 cup of corn and 1 cup of cooked rice if using. Simmer for an additional 5 minutes.
  • Taste and adjust the seasoning as necessary.
  • Remove from heat and ladle into bowls. Top with fresh cilantro.
