Ingredients
  

For the Stew

  • 2 lbs Lamb shoulder tender cuts
  • 3 tablespoons Vegetable oil for browning
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 1 large Onion sliced
  • 3 cloves Garlic minced
  • 2 medium Carrots sliced
  • 2 cups Beef or lamb broth rich base
  • 1 cup Guinness stout optional
  • 2 tablespoons Tomato paste
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Chopped parsley for garnish
  • 2 whole Bay leaves
  • 3 medium Potatoes (diced) to thicken the stew

For the Mashed Potatoes

  • 1.5 lbs Potatoes (for mashing) starchy varieties
  • ½ cup Milk for creaminess
  • ¼ cup Butter for richness
  • 1 teaspoon Salt to taste
  • 1 teaspoon Freshly ground black pepper to taste

Instructions
 

Prepare the Stew

  • Season the lamb with salt and pepper. Heat oil in a pot and brown the lamb pieces for 5-7 minutes.
  • Sauté the onion and garlic in the same pot until the onion is translucent, about 3-4 minutes.
  • Return the lamb to the pot, add carrots, potatoes, broth, stout (if using), tomato paste, thyme, parsley, and bay leaves. Stir to combine.
  • Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until lamb is tender.

Prepare the Mashed Potatoes

  • Boil the peeled and diced potatoes in salted water until tender, about 15-20 minutes. Drain.
  • In a pot, mash the potatoes with milk and butter until smooth. Season with salt and pepper to taste.

Serve

  • Remove bay leaves from stew, adjust seasoning if necessary, and serve with mashed potatoes on top or alongside.
  • Garnish with chopped parsley before serving.

Notes

Choose quality lamb for best flavor and don’t rush the simmering process for tender meat. Use starchy potatoes for creamy mash.
