Step‑by‑Step Instructions

  • Rinse 1 cup of lentils under cold water, then set aside to drain.
  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Sauté chopped onion for about 5 minutes until translucent. Add minced garlic and grated ginger, cooking for another 2 minutes.
  • Stir in turmeric powder, cumin, coriander, salt, and black pepper. Cook for 1 minute.
  • Add rinsed lentils and pour in 4 cups of vegetable broth. Bring to a boil, then reduce heat to simmer for 5 minutes.
  • Mix in 1 cup of diced tomatoes and continue to simmer for 20-25 minutes until lentils are tender.
  • Stir in 2 cups of chopped kale or spinach and let wilt for 5 minutes.
  • Remove from heat and stir in 1 tablespoon of lemon juice before serving.
  • Ladle into bowls, garnishing with fresh cilantro or parsley if desired.
