Step-by-Step Instructions

  • Cut the white fish fillets into bite-sized pieces and set them aside.
  • In a large pot, heat vegetable oil over medium heat. Add diced onion, minced garlic, and grated ginger. Sauté for 3-4 minutes.
  • Pour in vegetable or fish broth and bring to a gentle simmer, about 2-3 minutes.
  • Add coconut milk, stirring until combined, and simmer for an additional 2-3 minutes.
  • Stir in cherry tomatoes and sliced bell pepper, allowing to simmer for 5 minutes.
  • Mix in fish sauce and juice and zest of limes. Season with salt and pepper to taste.
  • Carefully add cut fish pieces and cook for 5-7 minutes until opaque.
  • Taste and adjust seasoning with salt, pepper, or lime juice.
  • Remove from heat, serve in bowls, garnished with cilantro and lime wedges.

Notes

For best flavor, use fresh fish and taste as you cook. Store leftovers in an airtight container for 3-4 days.
