  • 4 cups Yukon Gold potatoes thinly sliced

  • 2 tablespoons Butter
  • ½ cup All-purpose flour
  • 2 cups Milk whole milk preferred
  • 1 cup Sharp cheddar cheese shredded
  • 1 cup Gruyère cheese shredded

For the Topping

  • ½ cup Breadcrumbs for topping
  • ¼ cup Chives fresh chopped

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium saucepan, melt 2 tablespoons of butter over medium heat. Whisk in ½ cup of all-purpose flour and cook for 1-2 minutes until light golden color.
  • Gradually add 2 cups of milk, whisking continuously until the sauce thickens, about 3-5 minutes.
  • Stir in 1 cup each of shredded sharp cheddar cheese and Gruyère cheese. Season with salt and pepper to taste.
  • Layer half of the Yukon Gold potatoes in a prepared baking dish, pour half of the cheese sauce over them.
  • Layer the remaining slices of potatoes, pour the rest of the cheese sauce over the top.
  • Sprinkle breadcrumbs evenly on top.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove the foil and continue baking for an additional 15-20 minutes until golden brown and bubbly.
  • Let rest for 10 minutes and garnish with freshly chopped chives before serving.

Notes

Use Yukon Gold potatoes for the best texture. Feel free to experiment with different cheeses for added flavor.
