Cooking Steps

  • Remove chicken and sauté onions and garlic for 2-3 minutes. Add mushrooms and baby potatoes, cooking for another 5 minutes.
  • Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  • Return chicken thighs to the skillet, skin side up, nestled among the vegetables and sauce.
  • Bake in the preheated oven for 30-35 minutes until chicken is cooked through and potatoes are tender.

Notes
