For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar

  • 1 cups sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 0.25 cups cream soda

  • 0.5 cups brown sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Coloring

  • 1 bottle gel food coloring (red, yellow, blue, and green) for swirling

Step-by-Step Instructions

  • Preheat your oven to 325°F (160°C) and prepare your springform pan by lining it with parchment paper or lightly greasing it.
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into the bottom of the pan and bake for 8-10 minutes.
  • Beat cream cheese and granulated sugar until light and creamy. Add sour cream and vanilla extract, blending until smooth.
  • Add eggs one at a time, mixing gently after each addition. Gradually mix in cream soda until combined.
  • In a saucepan, combine heavy cream, brown sugar, and unsalted butter. Bring to a gentle boil, then simmer for 2-3 minutes. Stir in vanilla extract and remove from heat.
  • Divide butterscotch mixture into four bowls and add gel food coloring to each to create swirls.
  • Pour cheesecake filling over crust. Drizzle colored butterscotch mixtures on top and swirl together with a toothpick.
  • Bake for 50-60 minutes until edges are set but the center is slightly jiggly. Cool gradually in the oven.
  • Transfer to the refrigerator and chill for at least 4 hours or overnight.
  • Before serving, drizzle additional colored butterscotch over the cheesecake and garnish with edible gold dust or sprinkles.

Notes

Keep an airtight container in the refrigerator for up to 5 days. For longer storage, freeze for up to 2 months. Thaw in the refrigerator before serving.
