Ingredients
  

For the Peaches

  • 4-5 pieces Peaches cored and cut into wedges
  • ½ teaspoon Cinnamon to sprinkle over the peaches

  • 1 stick Butter creamed with sugar
  • 1 ¼ cup Sugar balancing the tartness of the peaches

  • 3 tablespoon Bourbon for flavor depth

Preparation Steps

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch cake pan by lining it with parchment paper and buttering it.
  • Arrange the cored and wedge-cut peaches over the parchment paper and sprinkle ¼ teaspoon of cinnamon over them.
  • In a medium saucepan, combine ¼ cup of water with ½ cup of sugar and heat until light brown, about 10-15 minutes, to make caramel.
  • Carefully remove the caramel from heat, stir in 1 tablespoon of bourbon, and pour it over the arranged peaches.
  • In a large mixing bowl, beat the softened butter with ¾ cup of sugar until light and fluffy, then add the eggs one at a time, followed by vanilla and 2 tablespoons of bourbon.
  • Whisk together 1 cup of all-purpose flour, ¼ cup of almond flour, 1 teaspoon of baking powder, and ¼ teaspoon of cinnamon in a separate bowl. Gradually fold this into the creamy batter until smooth.
  • Pour the cake batter over the prepared peaches and caramel in the cake pan, smoothing the surface with a spatula.
  • Bake in the preheated oven for about 30-35 minutes, checking for doneness with a toothpick.
  • Allow the cake to cool in the pan for 15-30 minutes before inverting it onto a serving plate.
