Equipment

  • 9-inch springform pan
  • Mixing bowl
  • measuring cup
  • Spatula
  • kitchen blowtorch

Ingredients

Crust

  • 1 cup Graham cracker crumbs These provide a buttery and sweet base for the cheesecake.
  • 2 tablespoons Sugar A touch of sweetness to enhance the crust.
  • 5 tablespoons Unsalted butter Brings richness and helps bind the crumbs together.

Cheesecake Filling

  • 16 ounces Cream cheese The star ingredient that gives this cheesecake its rich, creamy texture.
  • ¾ cup Granulated sugar Balances the tanginess of the cream cheese, making it delectably sweet.
  • 1 cup Sour cream Adds a luscious, tangy flavor that elevates the cheesecake experience.
  • 1 teaspoon Vanilla extract Infuses the cheesecake with comforting, warm flavors reminiscent of classic crème brûlée.
  • 3 large Eggs Help to create a smooth, airy texture while baking.

Topping

  • 2 tablespoons Granulated sugar This will be caramelized for that signature crisp top.

Instructions

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted unsalted butter until well-mixed. Press this mixture into the bottom of a 9-inch springform pan and bake for about 10 minutes until slightly golden.
  • In a large mixing bowl, beat softened cream cheese until smooth, then gradually add granulated sugar. Incorporate sour cream and vanilla extract, blending until fully combined. Add eggs one at a time, mixing just until incorporated.
  • Pour the cheesecake filling over the pre-baked crust, spreading evenly. Bake in the oven for 50-60 minutes until the edges are slightly puffed and the center jiggles gently.
  • Turn off the oven and leave the cheesecake inside for about 1 hour to cool slowly. After that, cool to room temperature, then cover and chill in the refrigerator for at least 4 hours.
  • Sprinkle an even layer of granulated sugar over the top. Using a kitchen blowtorch, caramelize the sugar until deep golden brown. Alternatively, broil for 2-3 minutes, watching closely.
  • Slice with a sharp knife dipped in hot water for clean cuts. Serve each slice chilled.

Notes

Use room temperature ingredients for smoother mixing and a creamier texture. Monitor baking closely to avoid overcooking.
