Instructions

Step‑by‑Step Instructions

  • Preheat your oven to 325°F (163°C). Gather your ingredients and baking equipment to streamline the process.
  • In a mixing bowl, combine 1 ½ cups of crushed dark chocolate cookies, ½ cup of melted unsalted butter, 1 tablespoon of granulated sugar, and a pinch of salt. Mix until fully combined, then press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes, allowing it to cool slightly.
  • In a large mixing bowl, beat 24 oz of softened cream cheese and 1 cup of granulated sugar together until light and fluffy. Add 1 cup of sour cream and 1 teaspoon of vanilla extract, mixing until smooth.
  • Crack 3 large eggs into the filling, one at a time, mixing gently after each addition until smooth.
  • Wrap the bottom of the springform pan in aluminum foil and place it in a larger baking pan filled halfway with hot water.
  • Bake for 1 hour. Afterward, turn off the oven, crack the door, and leave the cheesecake inside for another hour to set.
  • Remove the cheesecake from the oven and let it cool at room temperature for about 30 minutes. Then, chill in the refrigerator for at least 6 hours, or overnight.
  • Once chilled, pour a layer of caramel sauce over the cheesecake. Scatter 1 cup of chopped salted peanuts and drizzle melted chocolate over the caramel.
  • Sprinkle a pinch of flaked sea salt atop the cheesecake, enhancing the flavors.
  • Warm a knife under hot water for easy slicing, clean the knife between cuts, serve, and enjoy!

Notes

Chill the cheesecake overnight for the best flavor and texture. Use a hot knife for clean slices.
